It’s that magical turning point of the Harvest where all the Pinots are now resting in barrel and the Chardonnays are still slowly fermenting away. We await approximately 30 tonnes of Cabernet Franc between PEC and Niagara, picking as I write this. The vineyard crew have done their usual magnificent job in tying down the vineyard in advance of hilling up for the winter.
We have two outstanding Pinot Noirs being released in LCBO Vintages this weekend. When comparing to Burgundy, our 2019 County Pinot Noir is ethereal and elegant, similar to the wines that come from the Cote de Baune. Our 2020 Niagara Pinot is the biggest and boldest Pinot we’ve made to date, reminiscent of the richer Pinots that from the Cote de Nuits. Our Winter Food program launches this Monday and will remain available daily all season long! All winter we will be serving piping hot Bolognese lasagnas (vegetarian option available), classic French onion soup (vegan option available), fresh East Coast oysters, and our cold-smoked local trout.
